The vegan diet — what a drastic diet, isn’t it? No animal products whatsoever permitted, including egg, milk, cream and butter also out of the menu. That leaves us with no much to make some appetising and tasty food and what about cakes or pastries. Imagination is really needed in this situation and imagination is certainly not missing around us judging from what those vegan addicts are able to produce from their kitchens.

With that in my mind and having had to deal a few times in the past with some very nice vegan customers, I came up with a real vegan recipe that I will share in this article. It is a nice and moist vegan chocolate cake that can be eaten on its own or with some sort of garnish like vegan chocolate or vanilla sauce or even raspberry jam:

Here below are the ingredients needed for around 4 to 5 cakes of this delicious recipe:

Light whole-wheat plain flour: 220g

Plain cake flour: 225g

Sweet potato flour: 100g (to keep the cake moist)

Baking powder: 18g

Bicarbonate soda: 10g

Cocoa powder: 165g

Salt: 5g

Soya milk: 500g (rice or oat milk can also be used instead)

Corn oil: 260g

Rice malt syrup: 1000g

Apple cider vinegar: 7g

Vanilla essence: 10g


First turn the oven on as always with the temperature dial set to 180A?C (356A?F). Spray-grease around 4 or 5 cake tins then place a round piece of grease-proof paper on the bottom of each of them. Then start by sifting the plain flour, potato flour, baking powder and bicarbonate soda together, then add the whole-meal plain four last without sifting it. Mix thoroughly. In a saucepan heat the soya milk on low heat. When it is slightly bubbling, add the sifted cocoa powder and whisk well until it is dissolved. Remove from the heat. Combine the other liquid ingredients in a bowl and mix well. Add the cocoa mixture and combine. Add the wet ingredients to the dry ingredients.

Pour the mixture into the prepared cake moulds. Each cake mould should be filled to around 2/3 of their height. Insert into the pre-heated oven and bake for around 40 minutes. If your oven has a ventilation duct, keep it closed during the 1st half of the baking and then open it for the 2nd half. When a small knife inserted in the chocolate sponge comes out clean, take them out of the oven and let them cool down for a few minutes. When they have cooled down take them out of the tins and turn them over on cooling wire.

Spread 2 tablespoons of hommus and tomato paste on each slice of bread. Spread 1 large chopped mushroom, 1 chopped cherry tomato, 1 teaspoon of corn kernels, 2 halved olives and 2 halved sundried tomatoes on each slice of bread. Cook in oven on high (approximately 200° Celsius) for 15-20 minutes.

Easy vegetarian meal #4: Wraps


1 wrap (such as corn bread wrap) ¼ cup alfalfa sprouts ¼ cup beetroot slices ¼ cup grated carrot ¼ cup tomato slices ¼ cup cucumber slices ¼ cup soft tofu (optional) 2 teaspoons vegetarian mayonnaise

Place all ingredients (except mayonnaise) on wrap in a small strip. Pour mayonnaise over ingredients. Roll the wrap up firmly.

Easy vegetarian meal #5: Snack pinwheels


1 wrap (such as corn bread wrap) 1 vegetarian hot dog ½ cup baby spinach ½ cup pineapple pieces 1 teaspoon basil 2 tablespoons tomato paste 2 tablespoons vegetarian cream cheese or hommus

Spread tomato paste and vegetarian cream cheese/hommus all over wrap. Chop vegetarian hot dog into small pieces. Evenly spread hot dog pieces, baby spinach, pineapple pieces and basil over the wrap, leaving approximately 2cm strips at each end of the wrap. Roll the wrap tightly, using the 2cm at the end with paste on it as a “glue” to hold the wrap together. Cook in oven on high (approximately 200° Celsius) for 20 minutes. Cut wrap into slices approximately 1.5cm thick.

Easy vegetarian meal #6: Chips/wedges


2 large potatoes 1 teaspoon vegetable stock 1 teaspoon paprika 1 tablespoon basil

Chop potatoes into pieces roughly the size of wedges or chips. Place into a rectangular take-away container and spray with a small amount of olive/vegetable oil. Add vegetable stock, paprika and basil to potatoes. Close lid on container and shake well enough so that flavours have spread evenly over the potatoes. Cook in oven on high (approximately 200° Celsius) for 30 minutes.

Easy vegetarian meal #7: Vegetarian burgers/sandwiches


2 slices of bread 1 lentil pattie 2 slices of beetroot ¼ cup alfalfa sprouts ¼ cup grated carrot 2 slices of tomato 2 slices of cucumber 2 teaspoons tomato sauce

Place lentil pattie on 1 slice of bread. Add other ingredients (except tomato sauce) on top of pattie. Spread tomato sauce over top, and place second slice of bread on the sandwich. Can be cooked in oven on high (approximately 200° Celsius) for 15-20 minutes (optional).

Easy vegetarian meal #8: Spinach and tofu salad


2 cups baby spinach ½ cup firm cooked tofu ½ cup grated carrot 2 teaspoons sesame seeds 2 teaspoons lemon juice (or dressing of choice)

Place baby spinach in a bowl. Add sesame seeds and mix well to ensure seeds have spread evenly among the baby spinach leaves. Add grated carrot, tofu and lemon juice (or other dressing) and mix again. Refrigerate (spinach salad should be served cold).…

I was married about a year ago and had a lovely a Vegan Wedding. If you are considering planning a vegan wedding I thought I’d give you some advice.

Your wedding is your special day, probably a day you’ve been dreaming about your whole life. Why should you have to compromise? If your family loves you they will suck it up and not eat meat at one meal, that is least they can do for you, after all you are the one getting married which is every parent’s dream for their child. We vegans are always an afterthought at most weddings, family gatherings, and even restaurants. Shouldn’t we be entitled to one day of our lives were the vegan food is the main event?

Of course, all weddings do have some element of compromise. For example, I wanted to elope but I compromised and had a small wedding. I eat mostly raw food and I compromised and had a cooked vegan wedding. However, when it came down to it I was not going to be a hungry bride on my wedding day, my stomach wouldn’t let me compromise.

Besides 1 or 2 people most people at my wedding were big meat eaters and not used to vegan food, but everyone appreciates good tasting food that is really important. Make sure the food that you serve is the best vegan/vegetarian food you can find in your local area and that the catering company/restaurant you choose specializes in vegan food. We had our reception at an award winning vegan restaurant called Ravenswood, at Stanford Inn by the Sea who is known for their excellent vegan cuisine. Bottom Line, it really doesn’t matter if it’s vegan or not as long as it tastes good. And I’m almost positive people care more about the alcohol at weddings than they do about the actual food!

Give your guests plenty of options. We let our guests choose off the menu, this gave them some ownership in their choices. There was an excitement, a buzz at our table when guests were eating. People were looking around and asking: What did you get? What is that? Let me try some? The dinner was a culinary adventure. Some of the menu items were sea palm strudel, mushroom stuffed ravioli, quinoa pilaf, creamy red bell pepper and carrot soup with coconut !

Amazingly, no one complained and if they did, it didn’t reach me. My dad who is originally from Spain, didn’t even know the wedding was vegan.

Don’t preach about veganism, just let them experience a different type of cuisine. At an Indian wedding you wouldn’t expect there to be Italian Food so why wouldn’t you expect vegan food at a vegan couples wedding?

As far as the cake, in my opinion, chocolate cake is one of the easier cakes to make taste good vegan. Our baker used coconut milk to make a luscious chocolate frosting. Another option is to have a raw food wedding cake. Raw food cakes are amazing and don’t get dry like some vegan cakes can.

Every good wedding planner will tell you that your wedding is an expression of you, it is your chance to make a statement to friends and family about who you are. If vegetarianism is important to you why wouldn’t it be part of your wedding? My husband and I are passionate about vegetarianism, organic food, and gardening so we got married in a beautiful organic garden and had a quaint elegant vegan dinner amongst close friends and family, no regrets.

Part of being a vegetarian is doing what is best for you and not caring what people think. There is liberation and a deep sense of satisfaction in being yourself even at the risk of disapproval. Everyone should try it once an awhile!…
