Vegan Hummus:

Being a very renowned Middle Eastern dip, hummus can be a great appetizer or snack. The things required to prepare hummus are 5 cups cooked garbanzo beans, 2 garlic cloves, 2 green onions, olive oil, lemon juice, cumin, salt along with pepper, roasted sesame tahini, paprika plus pine nuts for garnishment.

While preparing the hummus, blend the garbonzo beans along with other ingredients in a blender. Transfer the blended paste into a bowl and drizzle little olive oil. Sprinkle little paprika and pine nuts over the prepared hummus to have a flavored you want some spicy taste, you can add sliced red chili to the hummus.

Enjoy the dish with warm soft pitas.

Mushroom Barley Soup:

The second vegan dish I have taken here is mushroom barley soup. This is a very delicious low fat soup which can be made in less than 10 minutes.

The things needed to prepare mushroom barley soup are: 2 cups chopped onion, 4 tsp oil, 2 garlic cloves, 2 carrots, 2 tsp coriander, 600 gm mushrooms, 1 cup barley along with 4 cups vegetable broth.

Take a deep pot and heat oil into that. Put the onion, garlic, coriander, carrots plus mushrooms in the pot and cook on medium heat. You can add dried herbs, barley and vegetable broth. Bring them to the boil and simmer for 20 minutes until barley becomes soft.

Your vegan mushroom barley soup is ready to be served.
